Gingerbread men that everyone can enjoy🎄🍪
Gluten-free, refined sugar-free (decorations aside 😉) and made with real wholefood ingredients.
A festive classic that’s Santa-approved and allergen-friendly! 🎅
Ingredients

170 g Almond Flour

40 g Tapioca Flour

2-3 tsp Ground Ginger (Depending on how much of a kick you like)

2 tsp Cinnamon

2 tsp Mixed Spice

¼ tsp GF Baking Soda

1/4 Unsalted Butter or 1/4 cup Coconut Oil, melted, cooled

¼ cup Maple Syrup
-
1 tsp Vanilla
-
1 tbs Molasses - or more maple syrup
Directions
Preheat oven to 180°C and line a baking tray with baking paper.
In a mixing bowl, add almond flour, tapioca flour, baking soda, ginger, cinnamon, and mixed spice. Mix until well combined.
In a separate bowl, whisk together the melted butter (or coconut oil), vanilla, maple syrup, and molasses.
Pour the wet mixture into the dry ingredients and mix until a dough forms. Refrigerate for at least 10 minutes.
Lay a sheet of baking paper on your bench, place the chilled dough on top, then cover with another sheet of baking paper. Roll out with a rolling pin until even. A thicker dough will make chewier cookies; thinner will make crispier ones.
Using a cookie cutter, cut out gingerbread shapes and place them onto the prepared tray.
Re-roll any remaining dough and continue cutting until all dough is used.
Bake for 8–10 minutes, depending on your oven and preferred level of crispiness.
Transfer to a cooling rack and allow to cool completely before decorating. Optional: use writing icing and M&M’s if you’re not avoiding refined sugar - or enjoy them plain!

Make paleo by using coconut oil and skipping the decorations!
