Spicy Chilli Laksa

Ingredients

• 1 tbs coconut oil 

• 6 cloves garlic, minced

• 1 shallot, diced 

• 4 tbs spicy chilli butter (replace with mild if desired)

• 400ml coconut cream

• 2 cups liquid chicken or veggie broth 

• 1 packet hard tofu, cubed 

• 1 small broccoli, chopped 

• 250g mushrooms, sliced

• 1/4 red cabbage, thinly sliced 

• 2 bundles vermicelli rice noodle, to serve

• Bean sprouts, to serve

• Coriander, to serve

• Chilli, sliced, to serve

• Lime wedge, to serve

Laksa Spices

• 1 teaspoon shrimp paste

• 2.5cm ginger, minced

• 2 tsp turmeric

• 1/2 stalk lemongrass
