Ingredients

2½ cups puffed quinoa, toasted

½ cup The Wholefoods Refillery Not Tella spread

¼ cup honey or maple syrup

4 tbsp coconut oil

3 tbsp cacao powder

¼ cup hemp seeds

¼ cup pumpkin seeds

⅓ cup chopped raw pistachios

1 tsp vanilla extract

Pinch of sea salt

250-400g dark chocolate chips + 1/2 tsp coconut oil to melt

Sea salt, to serve
Directions
In a large pan, toast puffed quinoa over a low heat until crispy and golden.
While toasting, line a 20cm square tin with baking paper.
In a small saucepan over low heat, gently melt together the Not Tella Spread, honey, coconut oil and vanilla until smooth.
Remove from the heat and stir in the cacao powder and sea salt.
In a large bowl, combine the puffed quinoa, hemp seeds, pumpkin seeds and pistachios.
Pour the chocolate mixture over the dry ingredients and stir until everything is evenly coated.
Firmly press the mixture into the prepared tin.
Melt dark chocolate and 1/2 tsp coconut oil. Spread evenly over the slice.
Refrigerate for 1–2 hours until firm before slicing into bars.
