An Aussie lunchbox classic, reimagined! All the fun of a fruit roll-up, none of the nasties - made with just 4 real ingredients.
Ingredients
-
4 cups frozen blueberries, defrosted (Can also use frozen strawberries or mango!)
-
2 tbs chia seeds
-
½ cup medjool dates, chopped
-
2 tbs lemon juice
Directions
Preheat oven to 70°C and line 2-3 large flat baking trays with baking paper
Place all ingredients in a blender and blend until smooth consistency
Pour a portion of the blended mixture onto the tray and spread evenly with a spatula, aiming for roughly 0.25 cm (¼ cm) thickness.
Repeat on other trays until mixture is used up.
Cook long and slow for 3-5 hours until fully dried out. Length depends on the thickness and your oven.
Once fully dried, cut into long strips, leaving the baking paper on and store in an airtight container.
