Gluten Free Anzac Biscuits

We couldn’t leave our gluten-free friends out! These Anzac biscuits are just as golden, chewy and delicious as the original - crafted with nourishing ingredients and no compromise on flavour!
Ingredients

1 cup almond meal

3/4 cup buckwheat flour

1 cup gluten-tested rolled oats

1/2 cup coconut sugar (or brown sugar)

125g butter (or coconut oil for dairy-free)

2 tbsp golden syrup (or maple syrup)

1/2 tsp bicarb soda

2 tbsp hot water

Pinch of sea salt
Directions
Preheat oven to 160°C (fan-forced) and line a tray.
In a bowl, mix almond meal, buckwheat flour, oats, coconut, sugar, and salt.
In a saucepan, gently melt butter and golden syrup.
Dissolve bicarb soda in hot water, then stir into the butter mixture (it will foam slightly).
Pour wet ingredients into dry and mix until combined.
Roll tablespoon-sized balls, place on tray, and flatten slightly.
Bake for 12–15 minutes, until golden on the edges. For a chewier biscuit, bake slightly less; for crispier, leave a little longer.
Cool on tray to firm up.
Recipe Note
Swap Oats for Quinoa Flakes for an oat free alternative.
Use a 1:1 ratio, and just 1 extra TBS of water!
