Gingerbread Snowball Bliss Balls ❄️☃️ Soft, gently spiced, and finished with a white chocolate coconut crunch 🤍 The nostalgic gingerbread flavour you know and love, made with nourishing wholefood ingredients.
Ingredients

1 cup almond meal

2 tbsp linseeds

1/4 cup desiccated coconut

1½ tsp ground ginger

1½ tsp ground cinnamon

1/2 tsp mixed spice

1/8 tsp salt

1 cup medjool dates, soaked for 10 minutes

1 tbsp maple syrup

1 tbsp molasses (or an extra tbsp maple syrup)
Topping
-
225 g white chocolate
-
1 tsp coconut oil
-
Desiccated coconut, to serve
Directions
Add almond meal, linseeds, coconut, salt, and spices to a food processor. Blitz until well combined.
Add softened dates, maple syrup, and molasses. Blitz until a dough-like consistency forms.
Roll mixture into evenly sized balls.
Melt the white chocolate and stir through the coconut oil until smooth.
Dip each bliss ball into the melted chocolate, then roll in desiccated coconut.
Refrigerate until set.
