Chocolate Easter Egg Nests

Ingredients

  • ½ cups dark chocolate chips, or keto buds

  • 2 tbs refined or extra virgin coconut oil

  • 1 cup unsweetened desiccated coconut

  • 3/4 cup rolled oats

  • 1 cup rice puffs

  • Chocolate-covered almonds and/or mini eggs for decoration

Directions

  1. Fill a saucepan with water and bring it to a gentle boil. Place a heat-proof glass bowl on top to create a double boiler, then add your chocolate chips and coconut oil. Stir continuously until melted and smooth. Alternatively, melt them in the microwave - stopping every 20–30 seconds to stir until fully melted.

  2. Add in your oats, puffed rice and desiccated coconut. Stir well.

  3. Spoon the mixture into a silicone muffin tray, then use the back of a spoon to gently press and shape it into nests by creating a small well in the centre.

  4. Refrigerate until hard.

  5. Decorate with chocolate almonds and easter eggs!
