Cinnamon Peanut Butter Donuts

Ingredients

    • 2 tbsp Nuttelex or coconut oil

    • 2 tbsp Cinnamon Donut Spread

    • 1/2 cup buttermilk (or regular milk + 1/2 tsp vinegar)

    • 1 large egg

    • 1/2 tsp vanilla

    • 1 tbsp sweetener

    • 1 tsp baking powder

    • 1/4 tsp cinnamon

    • 1 cup plain flour, sifted

    • 1 tbsp Nuttelex, softened

    • 1/4 cup icing sugar

    • 1/2 tsp vanilla

    • 1 tbsp+ milk, as needed for consistency

    Directions

    1. Preheat oven to 180C degrees and lightly grease a silicone donut pan.

    2. In a small bowl, soften the butter and cinnamon donut spread in the microwave, about 20 seconds. Stir well to combine and leave to cool slightly.

    3. In a large bowl, beat the egg and mix in the buttermilk, vanilla & butter mixture.

    4. Add the flour, sugar, baking powder & cinnamon and fold in until everything is combined.

    5. Carefully spoon mixture into the donut pan until about 3/4 full.

    6. Bake for around 10 minutes in the preheated oven, until doughnuts spring back when touched.

    7. Allow to cool slightly before removing from pan and placing on a cooling rack.

    8. While donuts are cooling, make the glaze.

    9. In a small bowl, soften the butter. Add the icing sugar and vanilla and stir to combine. Slowly add the milk, one teaspoon at a time, until desired consistency is achieved. Dip the donuts into the glaze and place them back on a cooling rack. Crumble 1/2 a biscuit cookie over each donut.
