Ingredients

1/14 cup dried apricots

1 cup rolled oats

1/4 cup desiccated coconut (not including garnish if you’d like to roll them in it too!)

1 1/2 tbs chia seeds

2 tbs coconut oil

3 tbs maple syrup
Directions
Place the apricots into a food processor and chop finely.
Add all the other ingredients, and mix again. If it’s too crumbly to roll into balls, add a little more maple syrup and mix to incorporate.
Roll into eggs shaped balls. Then roll in either chia seeds, desiccated coconut, or dipped them in chocolate!
Store in the fridge in an airtight container if they don’t get eaten first!
